Loaded Baked Potato Soup
6 slices bacon
1 Tbsp. butter
2 cloves garlic, minced
1/4 cup all-purpose flour
4 cups whole milk
4 large potatoes, peeled & cubed
3/4 cp. shredded cheddar cheese, plus more for topping
1/2 cp. thinly sliced scallions, plus more for topping
sour cream for topping
Cook bacon until crispy, then transfer to a paper towel-lined plate to cool.
Saute butter & garlic in a large pot over medium-high heat. Add in milk & flour. Whisk constantly, until slightly thick, about 5 minutes. Add potatoes & season generously with salt & pepper. Increase heat to a simmer. Cook potatoes until creamy & tender, about 25 minutes. Stir in cheese & scallions until creamy. Serve topped with crumbled bacon, sour cream, scallions, & cheese.
